With the help of a friend who hunts snow geese, we've come up with way to make tasty goose burgers
Goosemans recipe first;
After cleaning geese, soak them in cold water for 5 days changing the water daily. After the 5th day drain the geese. For every 4 whole goose breasts (8 halves) peel and chop 1 medium onion. Grind the breasts along with the onion. Make into patties and fry over low heat. They are delicious.
My wifes twist now;
When getting ready to fry, melt 1 tablespoon of butter in skillet, then add enough Worcestershire Sauce to cover bottom of skillet completely. Fry patties over low heat for a wonderful burger.
