20 Rattlers

QUANTITY
INGREDIENT
1 1/2 Pounds Boneless -Skinless Turkey Breast
1 1/2 Pounds Thick Sliced Bacon
1 Large Sweet Onion
1 Quart WHOLE Pickled Jalapenos
1 Cup Extra Virgin Olive Oil
1/2 Cup Balsamic Vinegar **
3/4 Teaspoon Salt
2 Teaspoons Black Pepper
2 Cloves Fresh Minced Garlic
2 Ounces Jack Daniels Whiskey ( Any High Quality Whiskey will
Work )
1 Teaspoon Garlic Powder
1 Teaspoon Onion Powder
1/2 Teaspoon Crushed Red Pepper
2 Teaspoons Brown Sugar ( Not Needed if High Quality Balsamic Vinegar
is used ) **

Directions:
Marinade

Mix the vinegar in a bowl with the Dry
Ingredients until sugar and salt dissolve.
Then infuse the oil slowly, whisking
constantly. (Or place all the ingredients in
a screw-top jar and shake to combine.)

Cut Turkey into cubes, roughly 2 inches long, 1 inch to 1

1/2 inches wide, about 1/2 to 3/4 inches thick.
Place Turkey into tray and cover with marinade.
Refrigerate for at least 1 hour. ( 2 hours is better )


Cut Bacon Strips in Half

Cut off Stem and cut Jalapenos in Half, lengthwise,
remove Seeds, and De-Vein with spoon
Cut Onion into 1/4 inch slices.

To assemble:

Take a piece of Turkey, put 1 slice of Jalapeno on one side,
1 Slice of Onion one the other, Wrap in Bacon and Secure
with a Toothpick.

Place in Shallow Chaffing pan END UP. Continue until all
are assembled.

Pour remaining marinade over the assembled Rattlers.

Grill uncovered until completely cooked and Bacon
crisp.
