I tried my hand at deer jerky using burger meat. For my first try I must say its not to bad. But now my question. Seems like the bottom racks got done considerably faster than the top racks. Do you rotate the racks once in a while, like a few off the bottom and move them to the top? I know my temperature was to low starting out but the top few racks of jerky aren't quite as done as the bottom racks. Bottom racks were real close to being cooked to long. Still pretty good eatin', just a tad to long in the dehydrator.

I rotate mine. I also make sure to use pure grind game, no fat added. The fat tends to go rancid quickly.

are you using a dehydrator or a smoker to do this?
