Messed up rib dinner

Well,
Sweetie and I had planned on doing a couple of racks of back loin ribs for dinner this evening, so she went straight to the grocery store after church this afternoon.
Bad news---no back ribs at the first stop, or the second stop.

So she found a nice rack of St. Louis cut spareribs.
They took longer to cook and made for a late supper, but I think they will be ok.

I much prefer St Louis ribs to the baby backs and such...they seem to have more soft stuff and that makes em more juicy. Those certainly look great!
 
Yessir. I want the whole slab myself. 2 hours at 200 will makem right. Those look perfect.

You can always salt, pepper, flour, and deep fry em also.

Looks terrible. You need me as a dedicated taste tester so you don't get sick or have to suffer with something that's not up to par.

They were great.
Sweetie likes back ribs better so there probably won’t be any more spares for a while.

I found a nice butt on sale a while back. It’s waiting in the freezer until I can get a good deal on another one.
Last time I did a butt it looked so lonesome all by itself I decided I’d do two at a time from now on.
