Night hunting in AZ

Jackrabbits must be taken in the daytime. The hunting seasons for jackrabbits are found in Commission Order 14 on page 84-85, Other Birds and Mammals. There is not a "daylong season" on them so they cannot be taken at night with any type of hunting weapon.

Coyotes and mountain lions are the only animals in AZ that have a daylong season (see Commission Order 13 and Commission Order 10).

Jackrabbits are not defined as a "game animal" so wanton waste of game meat does not apply if they are shot and left in the field. However, jackrabbits are good to eat. Millions of coyotes can't be wrong.

JACKRABBIT JERKY RECIPE

MARINADE NEEDED FOR 5 POUNDS OF BONELESS JACKRABBIT MEAT:

1 ½ cup Worcestershire Sauce
1 ½ cup soy sauce
1 ½ teaspoon garlic powder
1 ½ teaspoon black pepper
1 ½ teaspoon curry powder or chili powder

Mix all ingredients together and put in a tight sealing container. Place meat slices in marinade and soak for 48 hours in refrigerator. Shake occasionally to evenly cover meat. Drain and place meat slices on dehydrator trays. Dry meat slices until desired texture is obtained.
