Craw fish boil?

Does anyone have a recipe for spices to go into the water for a craw fish boil? There aren't many places in Michigan to pick up a bag of pre mixed seasonings for craw fish! lol.

Honestly, I've spent a lot of time down south, and I don't know of anyone that makes their own Jesse. We all just go to the store and buy it.

If you can find some good Pure Pork link sausage of the spicy cased variety, a few new potatoes, corn on the cob, whole heads of garlic, fresh shrimp and/or crab. And, do a Low Country Boil.

That one will make you a hit in the neighborhood!!

Outside on the Turkey Cooker, about half a pot of water to start, add your spice, couple of medium onions quartered, head or two of garlic, (just drop the whole works in, don't worry about peeling each clove) and bring the water to a boil. Add your potatoes first, cook them for a bit, dump in the corn, and sausage, cook them a couple minutes, followed by the crab, crawfish, and finally the shrimp. The crab and crawfish will cook in a matter of 5 minutes or so, shrimp will cook in 2 - 3 minutes. Secret is getting it all done at the same time.

Cover a table or two with plastic while you're cooking, duct taped underneath so the wind don't blow it away, spread a little newspaper on the table. When things get done cooking, drain the water off, and spread the goodies on the newspaper. If you have a perforated basket for the turkey cooker, that works best, you simply lift it all out. Let folks pick what they want out of the pile, and eat til you bust. May take a time or two for everyone to get used to simply picking things out of the pile, but that's the way they do it.

Cleanup is easy if you use paper or styrofoam plates and plastic forks. When everyone gets done, you pack up the leftovers, roll up the plastic table cloth, newspaper, and all that's left on the table inside it, drop it in a trash can. And, get out the garden hose!!

We gave up on Ham and Turkey for Christmas few years back. Someone suggested a boil, and we've been doing that since. Fire up the grill, and steam a few oysters for hors devours. Much more fun than turkey and dressing!! And, Christmas down here in the south allows it.
