Fried cressy greens

Had some fried cressy greens for lunch yesterday. They are starting to bolt and go to seed so this week will be the last of them. Gather your greens, clean them and cut into 3" leaf sections. Get your skillet HOT and add just a bit of cooking oil and toss the greens in and toss to scald and coat with oil. When cresses limp and pan sizzlin add just a small bit of vinegar, cover and steam for about 2 minutes and the vinegar should be almost gone. Theyre ready to serve! Add salt and pepper and spice to taste. Delicious! gillnet
