Sweet n Sour Ginger Pork Tenderloin

1/2 red bell pepper-sliced n diced.
1/2 yellow bell pepper-sliced n diced.
1/2 orange bell pepper-sliced n diced.
2 cups celery-sliced chunks.
2 1/2 broccoli-cut stems to separate tops.
1/4 medium onion-diced.
1/4 pound bacon-Pre Cooked, chopped 1/4" pieces.
1 can Water Chestnuts sliced.
1 can Bamboo Shoots-sliced.
Mix all in glass pan about cake size, cook in oven when meat is about ready for about 30 mins. Add meat and pour preheated sweet n sour evenly over all. Mix well and continue to cook about 15 mins or desired vegetable crunch.

Meat-Pork Loin 2 lbs cooked and cut to about 1"x1"x2".
Chicken Breast and about any tender meat will work.

Sweet n Sour-1 can 15 oz Contadina Brand with 2-3 Tablespoons shredded ginger root mixed in.

Rice-Jasmin Type
2 cups Rice
4 cups water
2 Tablespoons olive oil
1 Tablespoon butter/margerine
Bring water, oil, butter to a boil. Add rice, stir well and cover. Set timer 16 mins. Bring to boil then lower to warm. Stir at 8 mins, replace lid. At 16 mins remove from heat and put rice in glass pan then cover.

This is completely a dreampt up recipe that has fed many people. This is the first I have written it down. Have to say it is pretty good. You may add or adjust vegetables to suit.
