Where's the Beef

Do you add any fat? Beef, pork? I had half of mine mixed with beef fat and the other half mixed with bacon trimmings.

With elk I like it extra lean so no add. It doesn't hold together for burgers very well but is great for everything else.
Deer is an automatic blend usually with pork.

we usually do the same for deer, have the butcher grind in about 10% pork shoulder to fatten it up a bit.
