The cartridge is way more powerful than you need for coyotes, but that's not to say it isn't good. The main thing I like about it is the accuracy. Every 7mm08 I have ever shot was very accurate, so that factor in and of itself builds confidence, which goes a long way in the hunting fields.
If you enjoy the rifle and shoot it well, by all means use it. Caliber doesn't matter as long as it's pleasurable to you.
If you need an excuse to purchase another rifle, then maybe consider a lighter caliber. The 6mms are really good, such as a 6x45 in an AR platform, or an accurate bolt rifle in .243, and a lot of coyotes are being taken with .223's.
In a nutshell, whatever floats your boat, go for it.
