Anybody like brisket?

These are stalled at 163 right now.
I'm gonna wrap them when they hit about 170 and shoot for a finish around 200 degrees.

 
That looks good!

I smoked 2 Cornish hens yesterday.

I've been wanting to do a brisket some time soon. Still reading up on "the stall" when smoking a brisket.

Yeah I got tired of looking at them too so I took them off and wrapped them in foil and shut the lid on them.

 
Slice that sucker and give it the pull test.

You know this is torture. Came down with the Gout this weekend and am off protein for a while.

crapshoot, that's a bummer about the gout. A buddy has flare ups that make him miserable.
I pulled them at 170 and wrapped them and put them back on until they hit 200 degrees.
They're resting wrapped up in an old towel until 4 or 4:30 if I can stand it that long.
 
Man that looks good. Love brisket.

Brisket comboed with some good pulled pork BBQ makes for an awesome sandwich.

The flavor was excellent, but it could have been just a tad more tender.
These came from a little farmer's market that's selling some locally-grown beef.
I've got a bigger one ordered for next week-around 7-8 pounds I hope.
