Here are a couple Herder knives that I have. Herder was one of the largest knife makers in Germany up to WW II. We bombed their factory during the war early on and no blades were made since. Solingen German steel is great stuff.

The top pic is a slicer knife that has rose wood handles, and stays super sharp. I can slice deli thin off of the largest cut of meat.

The second is a Herder skinner blade that holds an edge to impressive standards. The handle is hickory and made by me.
